Soil-Driven Selection

Our agave is more than mature, it’s selected for the story the soil tells. Grown in mineral-rich Oaxacan terroir and hand-harvested at peak ripeness under the guidance of our Maestro Mezcalero, each plant reflects the land’s character, climate, and soul. A harvest that honors the earth as much as the spirit it becomes.

Earthen pit cooking

We slow-roast each hand-trimmed piña in traditional mezcal earthen pits, layered over a precise blend of oak, pine, and rock. Covered with agave fibers, natural materials, and earth, the piñas cook slowly, allowing natural sugars to caramelize without being overpowered by smoke. This is where raw becomes ritual.

Traditional Tahona Crushing

For our mezcal we use a traditional volcanic stone tahona, we gently crush the roasted agave, honoring a method passed down through generations. This slow, deliberate process preserves the integrity of the plant, drawing out natural sweetness, texture, and depth that machines simply can’t replicate.
It’s craftsmanship you can taste.

Open Fermentation

In open-air wooden vats, wild yeast meets cooked 100% agave in a slow, natural fermentation.
Each batch is hand-stirred and carefully guided by our Master Mezcalero to preserve balance and consistency, allowing air, time, and place to shape layers of complexity and depth of flavor.
The result is a refined natural fermentation that brings clarity, structure, and character to the final mezcal.

Distillation

Once the natural fermentation of mezcal is complete, the spirit is double-distilled in copper pot stills under the careful eye of our Maestro Mezcalero.
This slow, hands-on process refines the mezcal while preserving the true character of the agave, resulting in a clean, balanced profile with clarity and depth.
Each batch is evaluated with intention, delivering a refined 100% agave mezcal with notes of citrus, exceptionally less smoke, and hints of earth.
