The Heart of México

Eduardo “Lalo” Castro brings his entrepreneurial fire to something deeper, an expression of cultural pride and legacy. Inspired by the beauty and people of Oaxaca, he set out to craft a mezcal that honors centuries of tradition while remaining effortlessly smooth and approachable.

The Art of Mezcal

Harvesting is an act of patience.
We believe great mezcal begins by knowing when not to harvest. Each agave is selected at full maturity, guided by experience rather than speed, respecting both the plant and the land it comes from.

Cooking is an exercise in restraint.

We believe the true character of agave is revealed through time, not intensity. By cooking slowly and patiently, natural sugars unfold without overpowering the spirit, shaping a cleaner, more refined expression of mezcal.

Agave should be handled gently, never forced.
A slower, more deliberate approach allows the plant’s natural character to be released without aggression or shortcuts, preserving natural sweetness and setting the foundation for a balanced, refined spirit.

Fermentation is where time and nature take the lead.
Wild yeast and open-air fermentation allow flavor to develop naturally, creating balance, depth, and clarity in every batch.

Distillation is guided, not rushed.
Careful decisions and a hands-on approach preserve the agave’s character, creating a clean, balanced mezcal with clarity and depth.
